Cuchinta

Special Cuchinta

Ingredients:

  • 1 cup Gold Medal all – purpose flour
  • 1 cup brown sugar
  • 2 cups water
  • 1 teaspoon lihia (Iye)
  • Few drops of yellow food color or atsuete
  • Grated coconut

Procedures:

How to serve/prepare:

  1. Boil in a water for the steamer.
  2. In a bowl, blend all the ingredients except grated coconut.
  3. Mix until smooth and free from the lumps.
  4. Strain.
  5. Pour mixture into cuchinta molds or ungreased muffin pans about one – half full.
  6. Steam for 10 to 20 minutes.
  7. Cool for 5 minutes then remove from pans.
  8. Serve with grated coconut.

Caramel Butter Tarts

Caramel Butter Tarts

INGREDIENTS:

  • 1 cup Gold Medal all-purpose flour
  • 1/2 cup butter or margarine, softened
  • 1/4 cup confectioners’ sugar

Fiiling:

  • 3 tablespoons softened butter or margarine
  • 3/4 cup brown sugar
  • 1 beaten Maya Farms egg
  • 1/2 teaspoon salt
  • 1/2 cup chopped raisins
  • 1/3 cup chopped walnuts

PROCEDURES:
How to Prepare:

  1. Preheat oven to 350°F.
  2. Generously grease flour 24 small muffin cups, 1 3/4″ in diameter.
  3. Mix flour, butter and sugar using hands or a fork.
  4. Divide dough into 24 small balls.
  5. Press each ball against the sides and bottom of the prepared muffin cups.
  6. Do not allow the pastry to extend above the tops of the cups.
  7. Set aside.

Prepare Filling:

  1. Mix butter and brown sugar.
  2. Stir in egg, salt, raisins and walnuts.
  3. Spoon a scant tablespoon of the mixture into each cup.
  4. Bake until light brown for about 20 minutes. Cool.
  5. Remove tarts from cups by inverting the pan.

Crisp-Ever Chicken Drumstick

Ingredients:

  • 1 kilo chicken drumstick
  • 2 teaspoons soy sauce
  • 1 teaspoon salt
  • 3 pieces kalamansi
  • oil for frying
  • 1 cup Gold Medal all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Maya Farms eggs, slightly beaten
  • 1 cup crushed Big G Country Corn-flakes

Procedures:
How to prepare and cook:

  1. Marinate chicken in soy sauce, slat and kalamansi juice.
  2. Let stand for 30 minutes to 1 hour or overnight.
  3. Heat oil in a pan.
  4. Dredge chicken in flour seasoned with salt and pepper.
  5. Dip in beaten egg then coat with crushed cornflakes.
  6. Deep fry until chicken is cooked and golden brown.

Fresh Ubod Salad

 Fresh Ubod Salad

Ingredients:

  • 6 cups soft ubod, sliced into strips
  • 1/4 cup chopped red bell pepper
  • 1/3 cup chopped green onions

Dressing:

  • 1/3 cup vinegar
  • 1/4 cup mustard
  • 6 tablespoons corn oil
  • 2 tablespoons water
  • 2 Maya Farm eggs
  • 1 teaspoon paprika
  • 1 tablespoon sugar
  • salt and pepper to taste
  • 1/4 cup fried and crumbled Maya Bacon for garnishing

Procedures:
How to prepare:

  1. Soak ubod strips in cold water for half an hour.
  2. Drain and place in a salad bowl.
  3. Add red bell pepper and green onions.
  4. Chill.
  5. Put all ingredients for the dressing in a bottle.
  6. Close tightly then shake to blend.
  7. Pour over salad and toss lightly.
  8. Top with bacon.

Adobong Pusit

For Lunch: Best with Rice, Fruits and Fresh Ubod Salad.

Ingredients:

  • 1/2 kilo pusit
  • 1/4 cup water
  • 1/2 cup vinegar
  • 1/2 teaspoon whole peppercorns
  • salt to taste
  • 5 cloves garlics, crushed
  • 2 tablespoon oil
  • 1 small onion, sliced
  • 2 tomatoes, sliced
  • sugar to taste

Procedures:
How to cook/prepare:

  1. Wash and clean pusit very well.
  2. Remove membranes, eyes and stomach. Keep the ink sac intact.
  3. Boil pusit in water, vinegar, pepper, salt and garlic. Cover and separate garlic.
  4. Reserve sauce.
  5. In a separate pan, saute garlic in hot oil until brown.
  6. Add onions and tomatoes and cook until wilted.
  7. Add pusit and let simmer for 5 minutes.
  8. Add reserved sauce and a little sugar to taste.
  9. Simmer until sauce is reduced.

Fruity Coleslaw

Ingredients:

1 shredded head cabbage
1/4 cup sugar
1 tbsp lemon or kalamansi juice
1-2 cups mayonnaise
1/2 tsp salt
1/4 tsp peeper
1 cup grated carrots
4 pieces Maya hotdog, Boiled and diced
1 cup cubed cheddar cheese
1/2 cup pineapple tidbits
1/2 cup raisins (optional)

Procedures:
How to prepare:

Place shredded cabbage in a large sald bowl.
Wash and drain. Sprinkle sugar and toss just until mixed.
Cover and chill for 30 minutes.
Combine lemon or kalamansi juice and mayonnaise in a small bowl. Set aside.
Remove cabbage from the refrigerator.
Season with the salt and pepper.
Add carrots, hotdog, cheese and pineapple tidbits.
Toss with mayonnaise. Chill before serving. Top with raisins, if desired.
